Cinnamon Coffee-cake Camping needn't be boring, as they say you can still have your 'Cake And Eat It', what a treat to have this shared around the campfire. Ingredients: 2 Tbls Butter or margarine 1 cup Packaged biscuit mix 1/3 cup Evaporated milk, undiluted 1 Tbls Prepared cinnamon-sugar Method: - Make Coffeecake: Cut butter into tiny pieces over biscuit mix in medium bowl. Toss lightly with fork until butter is coated. Make a well in center, pour in milk and cinnamon-sugar, stirring with fork just until mixture is moistened. Turn dough into a lightly greased and floured 8-inch shiny, heavy skillet. With floured hands, pat down evenly into the skillet. Cook, covered, over very low heat, 12 to 15 minutes, or until a cake tester or wooden pick inserted in center comes out clean. For Topping: Spread the coffee-cake with 2 Tbls butter or margarine. Then sprinkle 1 tsp prepared cinnamon-sugar over all of it. Cut into quarters, and serve warm. Cinnamon Sugar: Combine 1/2 cup sugar with 2 tablespoons ground cinnamon. Use true (soft-stick) cinnamon for mild, aromatic flavor; use cassia cinnamon for bolder, spicier flavor. Or crush 1 cinnamon stick and grind in a spice grinder with 1/4 cup sugar until a fine powder is formed, then mix in 1/4 cup more sugar. Just think if you made a larger amount of Cinnamon Sugar, you can store it it an air tight container and it is there for a multitude of uses. Me I love it on my porridge in the morning, and remember Cinnamon is good for you! http://payspree.com/26405/gloshei | Cinnamon Coffee Cake Home Made Cinnamon Sugar |
