Mini Quiches Finger Food: Another winner for the Festive season and beyond, what would we do without 'ready made' pastry! For me it is like a lifeline to always have a packet stored in my refrigerator or frozen. Ingredients: 1 x 12oz (350g) packet of short crust pastry 3 eggs 1/2pint (300ml) double cream 4oz (125g) diced bacon ***** 1 tsp (5ml) chopped fresh parsley (if available) salt & pepper grated nutmeg Buns tins to make 24 Quiches Method: Preheat oven to Mark 4/350*F/180*C. Roll out pastry thinly and cut out 24 rounds, using a 21/2inch cutter. Line the bun tins with the pastry rounds Put the eggs in a bowl and beat, then add other ingredients. Spoon the mixture into the pastry cases. Bake for 10-15 minutes until golden Serve hot or cold. ***** Sometimes ready chopped bacon pieces can look a little fatty, make your own with lean back bacon slices. | Google Images |
