An easy and 'yummy' cake when the mid-afternoon hunger pangs strike. This tender, moist cake is full of old-fashioned comfort, and the brown sugar sauce makes it special. For a festive occasion, top with a dollop of whipped cream or Creme fraiche. Ingredients: 225 g plain flour 110 g butter or margarine 175 g brown sugar 25 g demerara sugar (for topping) 90 g sultanas 3 medium - large dessert apples, peeled, cored & cut into chunks. 2 tsp baking soda 1/2 - 1 tsp mixed spice 1/4 tsp grated nutmeg 2 eggs beaten Method: Grease and line a 20 cm cake tin, Preheat the oven 180°C / Gas 4, Cream butter and sugar together until light and fluffy, Sift together flour, soda, and the spices, Alternately add small amounts of the flour mixture and eggs, Fold in the apples and raisins to make a stiff mixture, Transfer the mixture to your baking tin and sprinkle the top with Demerara sugar, Bake for about one hour or until the wooden or metal skewer inserted into the centre comes out clean, Let cake stand for 10 minutes and then carefully remove from tin, place on wire rack to finish cooling. http://payspree.com/26405/gloshei |
